Grand Hyatt Seoul turns Kilian Paris scent into drink

Kilian Hennessy grew up among the oak barrels of his family's cognac house before founding the French perfume label Kilian Paris, and his Angels' Share fragrance traces that memory through cognac, oak, cinnamon and tonka bean.

Grand Hyatt Seoul has taken the scent back to its source. The lobby lounge Gallery is serving three cocktails inspired by the collection through Oct. 31.

The namesake Angels' Share builds on Hennessy VSOP with vanilla sugar, cinnamon, Angostura bitters and walnut. Angels' Share Paradis adds vanilla syrup and raspberry eau-de-vie for a fruitier pour. The nonalcoholic Angels' Share on the Rocks mixes tonka bean syrup and cinnamon with fresh orange juice and sparkling water.

Signiel Seoul stocks Yannick Alleno's chocolate line

Michelin three-star chef Yannick Alleno has shaped dining at Signiel Seoul since the hotel opened in 2017, when he launched the modern French restaurant Stay on the 81st floor of Lotte Tower and began consulting on menus across the property.

That work now extends to chocolate. The Pastry Salon on the 79th floor is carrying Alleno & Rivoire, the brand he created with pastry chef Aurelien Rivoire.

The signature sticks, thin chocolate shells filled with praline in flavors including black sesame, salted pistachio, hazelnut and citrus, roasted peanut and roasted coconut, sell for 60,000 won for six pieces and 110,000 won for 12.

Sables, hazelnut biscuits wrapped in dark chocolate, are 50,000 won for ten. A praline collection of almond, Piedmont hazelnut, French flaxseed, US pecan and Indonesian coconut is 70,000 won for 10.
