Ingredients:

  • 600 grams pork belly (can substitute with pork shoulder or front leg)
  • 1 onion
  • 1 green onion
  • 1 tablespoon salt
  • 1 tablespoon sugar
  • whole peppercorns
  • garlic (optional)
  • lettuce
  • kimchi

Instructions:

  • Sear 600 grams pork belly in an oiled pan until golden (optional, for added flavor)
  • Cut 1 onion in half and slice the green onion into bite-sized pieces
  • Add the onion, green onion, salt, sugar, and 1 liter of water to a pot
  • Place the seared pork into the pot, cover, and simmer over low heat for 1 hour
  • After 1 hour, remove the pork and slice thinly
  • Wrap the pork, kimchi and garlic in lettuce leaves and enjoy as a wrap

Tip

For cleaner slices, let the meat cool before cutting
