Ingredients:
- 600 grams pork belly (can substitute with pork shoulder or front leg)
- 1 onion
- 1 green onion
- 1 tablespoon salt
- 1 tablespoon sugar
- whole peppercorns
- garlic (optional)
- lettuce
- kimchi
Instructions:
- Sear 600 grams pork belly in an oiled pan until golden (optional, for added flavor)
- Cut 1 onion in half and slice the green onion into bite-sized pieces
- Add the onion, green onion, salt, sugar, and 1 liter of water to a pot
- Place the seared pork into the pot, cover, and simmer over low heat for 1 hour
- After 1 hour, remove the pork and slice thinly
- Wrap the pork, kimchi and garlic in lettuce leaves and enjoy as a wrap

For cleaner slices, let the meat cool before cutting
