Shaved ice topped with sweet red bean paste, rice cakes and condensed milk is a refreshing summer treat in Korea.

Ingredients:

  • 2 cups milk
  • 1 cup water
  • 4 tablespoons sweetened condensed milk
  • ½ cup sugar
  • ½ cup corn syrup
  • 2 cups red beans
  • a few pieces rice cake
  • powdered multigrain mix (optional)
  • Rice cake (optional)
  • a pinch salt

Red bean paste instructions:

  • Soak 2 cups red beans in water for 12 hours.
  • Add the soaked beans and 1 liter water to a pot and boil for about 20 minutes until the beans are soft.
  • Once the beans are soft, add ½ cup sugar, ½ cup corn syrup and a pinch of salt.
  • Simmer on low heat until the paste thickens.

Shaved ice instructions:

  • In a mixing bowl, combine 2 cups milk, 1 cup water, 4 tablespoons sweetened condensed milk and a pinch of salt.
  • Freeze the mixture for about 8 hours.
  • Use an ice shaver to shave the ice.
  • Place the shaved ice in a bowl.
  • Top with red bean paste, powdered multigrain mix and pieces of rice cake.
