Samgyeopsal, which literally translates to “three-layered meat,” is one of the most beloved Korean barbecue dishes, known for its affordability and perfect pairing with kimchi or soju. However, with its rising prices — averaging over 20,000 won ($14.60) for a 200 g serving at restaurants — it has been shedding that affordable reputation.
Still, this dish remains a cherished favorite, celebrated for its crispier pork texture and savory flavor resulting from the perfect balance of fat and meat.
There’s even a day dedicated to samgyeopsal: “Samgyeopsal Day” on March 3, when grocery stores, online shops and restaurants offer special promotions and meals centered on this dish. (Koreans refer to both the pork cut and its grilled dish as samgyeopsal.)
To savor samgyeopsal like a local, grill the pork belly and wrap it in a lettuce leaf or other leafy greens with a dollop of ssamjang (spicy fermented soybean paste) and a slice of garlic.
For the complete experience, try taking it all in one satisfying bite!
