Ingredients:

1/2 cucumber

80 grams ground beef

A handful of baby greens

1 green chile pepper

200 grams somen (thin) noodles

A pinch of sesame seeds

Beef marinade ingredients:

1/2 tablespoon soy sauce

1 teaspoon sugar

1/2 teaspoon minced garlic

1/2 tablespoon sesame oil

A pinch of black pepper

Noodle sauce ingredients:

2 1/2 tablespoons soy sauce

1 tablespoon oligosaccharide syrup

1/2 teaspoon minced garlic

1 teaspoon sugar

2 tablespoons sesame oil

A pinch of black pepper

Instructions:

Julienne the cucumber, sprinkle it with a little salt, let it sit, then squeeze out excess water. Slice the green chili pepper into rings and rinse the baby greens in cold water, then drain well.

Pat the ground beef dry with paper towels, then marinate it with the beef marinade ingredients. In a separate bowl, mix all the noodle sauce ingredients until well combined.

Heat a pan with a little oil and stir-fry the marinated beef until cooked through.

Boil water in a pot, add the somen noodles and stir with chopsticks to prevent clumping. When the water starts to boil, add half a cup of cold water and repeat this process 2 to 3 times until the noodles are cooked. Rinse the noodles under cold running water several times to remove excess starch, then drain thoroughly.

In a mixing bowl, combine the cooked noodles, noodle sauce and stir-fried beef. Toss until well mixed.

Serve the noodles in a bowl, topping with julienned cucumber, green chili pepper rings and baby greens.

Garnish with sesame seeds and enjoy your meal!
