Ingredients:

600 grams pork belly (whole piece)

2 cabbage leaves

1/2 cucumber

1/2 red onion

A small handful of radish sprouts

1/4 green chile pepper

1/4 red chile pepper

A pinch of black sesame seeds

Cooking oil as needed

Ingredients for boiling meat:

8 cups water

2 tablespoons doenjang (Korean soybean paste)

1/2 cup rice wine

1 stalk green onion

1/2 onion

5 cloves garlic

1/3 piece ginger (about the size of 2 garlic cloves)

2 bay leaves

1/2 tablespoon coarse salt

10 whole black peppercorns

Garlic sauce ingredients:

3 tablespoons minced garlic

1 tablespoon olive oil

2 tablespoons corn syrup

1/2 tablespoon lemon juice (or vinegar)

Two pinches of salt

Vegetable salad sauce ingredients:

2 tablespoons water

1 tablespoon soy sauce

1 tablespoon vinegar

1 tablespoon sugar

1/2 teaspoon sesame oil

1/4 teaspoon mustard

A pinch of sesame seeds

Instructions:

Heat a pan with a little oil, add the pork belly and sear all four sides until golden brown. Drain on paper towels to remove excess oil.

In a pot, add the boiling ingredients and bring to a boil. Add the seared pork belly and simmer over medium heat for about 50 minutes. (Tip: After turning off the heat, leave the pot covered for an additional 10 minutes to allow the meat to rest.)

Thinly slice the cucumber, red onion and cabbage. Soak them in cold water briefly, then drain well. Rinse the radish sprouts and finely chop the green and red chile peppers.

In a pan, heat the olive oil over low heat, add the minced garlic and saute for 1 to 2 minutes. Add the corn syrup, salt and lemon juice to make the garlic sauce.

Remove the cooked pork belly, let it rest briefly, then slice into bite-sized pieces.

In a bowl, gently mix the sliced vegetables. In a separate small bowl, combine the vegetable salad sauce ingredients.

Arrange the sliced pork on a plate around the salad, placing the vegetable salad in the center. Drizzle the salad sauce over the vegetables and top the pork with the chopped chile peppers, garlic sauce and black sesame seeds.
