Main ingredients:

  • 600g pork belly, whole piece: 600 g
  • 2 leaves cabbage: 2 leaves
  • 1/2 cucumber
  • 1/2 red onion
  • Small handful of radish sprouts
  • 1/4 each of green and red chili peppers
  • Pinch of black sesame seeds
  • Cooking oil

Ingredients for boiling pork:

  • 8 cups water
  • 2 tablespoons Korean soybean paste (doenjang)
  • 1/2 cup cheongju (Korean rice wine)
  • 1 stalk green onion
  • 1/2 onion
  • 5 cloves garlic: 5 cloves
  • 2 cm ginger
  • 2 bay leaves
  • 1/2 tablespoon coarse salt
  • 10 whole black peppercorns
  • Garlic Sauce
  • 3 tablespoons minced garlic
  • 1 tablespoon olive oil
  • 2 tablespoons oligosaccharide syrup
  • 1/2 tablespoon lemon juice (or vinegar)
  • 2 pinches salt

Vegetable dressing:

  • 2 tablespoons water
  • 1 tablespoon soy sauce
  • 1 tablespoon vinegar
  • 1 tablespoon sugar
  • 1/2 teaspoon sesame oil
  • 1/4 teaspoon prepared mustard
  • Pinch sesame seeds

Heat a pan over medium-high heat and lightly coat it with oil. Add the pork belly and sear all four sides until nicely browned. Transfer to a plate lined with paper towels to drain excess oil.

Add all the ingredients for boiling the pork to a pot. Once the liquid comes to a boil, add the seared pork belly and simmer over medium heat for about 50 minutes.

(Tip: Turn off the heat and let the pork rest, covered, for about 10 minutes.)

Thinly slice the cucumber into long, thin strips. Finely slice the red onion and cabbage, soak them briefly in water, then drain well. Rinse the radish sprouts thoroughly and finely chop the green and red chili peppers.

Add the olive oil and minced garlic to a pan and saute over low heat for 1–2 minutes. Add the oligosaccharide syrup, salt, and lemon juice, and stir to make the garlic sauce.
