Ingredients:

  • 4 strips yellow pickled radish
  • 1 red bell pepper
  • Handful green onions (chives or scallions)
  • 3 shiitake mushrooms
  • 4 tablespoons pancake mix
  • Cooking oil
  • 12 wooden skewers

Batter ingredients:

  • 6 tablespoons pancake mix
  • 1/2 cup water
  • 2 pinches turmeric powder

Instructions

Cut the pickled radish into thirds lengthwise. Slice the red bell pepper, shiitake mushrooms, and green onions to match the size of the pickled radish pieces.

In a bowl, mix the batter ingredients to create a turmeric-flavored mixture.

Skewer the ingredients in the following order: shiitake mushroom, green onion, red bell pepper, pickled radish and shiitake mushroom.

Lightly coat the skewers in pancake mix, then gently tap off the excess. Dip the skewers evenly into the turmeric batter.

Tip: If you coat only one side of the skewers with pancake mix and then dip them in turmeric batter, the skewers will have a brighter and more vibrant yellow color when cooked.

Heat a pan over medium heat, add a generous amount of cooking oil, and cook the skewers evenly on both sides until golden.
