Main ingredients:

200 grams bracken (gosari, fernbrake)

200 grams somyeon noodles (thin wheat noodles)

½ stalk green onion

1 green chile pepper

Some sesame seeds

2 egg yolks

Some salt

Sauce ingredients:

2½ tablespoons soy sauce

1 tablespoon oligo syrup

½ teaspoon minced garlic

1 teaspoon sugar

2 tablespoons sesame oil

Some black pepper

(Serves 2)


Instructions:

Cut the bracken into 3 cm pieces. Roughly chop the green chile pepper, and finely slice the green onion. In a bowl, mix all the sauce ingredients together.

Heat a pan with sesame oil, stir-fry the chopped green onion, then add the bracken and a pinch of salt. Stir-fry for about 2 minutes.

Boil water and add the somyeon noodles, stirring to prevent them from sticking. When the water boils, add half a cup of cold water and repeat 2-3 times until the noodles are cooked. Rinse the noodles under cold running water to remove excess starch, then drain well in a strainer.

In a large bowl, mix the boiled noodles, stir-fried bracken and the sauce until well combined.

Serve in a dish, top with egg yolk and chopped green chile peppers, sprinkling with sesame seeds.
