Carrot gimbap is a simple, flavorful Korean rice roll featuring seasoned carrots. Its natural sweetness and minimal ingredients make it a refreshing, light meal or snack.

Main ingredients:
- 3-4 carrots
- 5 eggs
- 2 cups rice
- 3 sheets gimbap seaweed
- Some cooking oil
- Some salt
- 1 tablespoon minced garlic
- 2 tablespoons sesame oil
Rice seasoning ingredients:
- 1/2 teaspoon salt
- 1/2 tablespoon sesame oil
- Some sesame seeds
- (serves 2)
Instructions:
Wash the carrots thoroughly and slice them into thin strips using a vegetable slicer.
Heat 2 tablespoons of oil in a pan and stir-fry the sliced carrots. Add some salt to season.
When the carrots are halfway cooked, add minced garlic and sesame oil, and stir-fry for another 1-2 minutes. Turn off the heat and let it cool.
Beat the eggs and mix in some salt, then strain the mixture through a sieve.
Heat a pan with a little oil, pour the egg mixture, and roll it 3-4 times to make a rolled omelet.
Once cooled, slice the rolled omelet at a diagonal to create overlapping heart-shaped pieces.
Mix the cooked rice with the rice seasoning ingredients.
Spread a thin layer of rice on the seaweed sheet, then add the stir-fried carrots and egg. Roll the gimbap tightly.
Slice the gimbap into bite-sized pieces, place them on a plate, and sprinkle with sesame seeds.
