Main ingredients:

1/2 block spam

1/3 piece onion

1 bowl rice

2 eggs

1 tablespoon mayonnaise

1 tablespoon finely chopped green onion

Cooking oil

Sesame seeds

Sauce ingredients:

2 tablespoons soy sauce

1 tablespoon sugar

2 tablespoons water

1 tablespoon mirin

(Serves 1)

Instructions:

Slice the onion and cut the spam into bite-sized pieces. (For better flavor, pour hot water over the spam to remove excess additives.)

Beat the eggs in a bowl. In a separate bowl, mix the sauce ingredients together.

Heat a pan with cooking oil, scramble the eggs, and set them aside on a plate.

In the same heated pan, fry the spam until golden brown.

Heat another pan with cooking oil, saute the onion until softened, then add the sauce and mix lightly. Turn off the heat.

Serve the rice in a bowl, top with the sauteed onions and fried spam, and arrange the scrambled eggs around the edges.

Drizzle mayonnaise in a zigzag pattern over the top, then garnish with green onion and sesame seeds. (If you don’t have green onion, feel free to substitute with leek, chili pepper, seaweed flakes, or parsley as per your taste.)
