Main ingredients:

  • 4 sheets seaweed (for gimbap)
  • 1 bowl rice
  • 4-6 slices cheese
  • 8 lettuce leaves
  • An appropriate amount of cooking oil

Spam stir-fried kimchi ingredients:

  • 4 slices spam
  • 1 cup kimchi

Kimchi stir-fry seasoning ingredients:

  • (Skip soy sauce if using salty kimchi)
  • 1/2 tablespoon soy sauce
  • 1 teaspoon sugar
  • 1 teaspoon sesame oil

Tuna mixture ingredients:

  • 1 can tuna
  • 1/2 cucumber
  • 2 tablespoons mayonnaise
  • A little ground pepper

Pickling solution ingredients:

  • 1/2 cup water
  • 1 tablespoon vinegar
  • 1 teaspoon salt

Rice seasoning ingredients:

  • 1 teaspoon sesame oil
  • A little salt
  • A little sesame seeds

Instructions:

Thinly slice the cucumber and soak it in the pickling solution for about 10 minutes. Drain the pickled cucumber on a paper towel to remove excess moisture.

Mix the drained tuna with mayonnaise and ground pepper.

Season the rice with sesame oil and a little salt.

Cut the spam into 1 cm thick slices and fry them until golden brown. In the same pan, stir-fry the chopped kimchi with the seasoning ingredients. (Tip: If you prefer less salty food, use light spam or boil it briefly before frying.)

Use scissors to cut a slit from the center of each seaweed sheet to the edge. Place cheese, rice, stir-fried kimchi with spam and lettuce on each of the four sections in a clockwise direction, then fold the seaweed into quarters.

Repeat the same folding method for the tuna version.

Wrap the folded gimbap in plastic wrap, cut in half and enjoy!
