Ingredients:

1 sea bream

1 stalk green onion

1 green chile pepper

1 red chile pepper

1 piece ginger

A pinch of shredded red chile (optional)

Seasoning for fish:

2 tablespoons ginger juice

2 tablespoons cooking wine

A pinch of salt

Sauce ingredients:

2 tablespoons soy sauce

3 tablespoons water

1 tablespoon sugar

2 tablespoons cooking wine

1/2 tablespoon minced garlic

A pinch of black pepper

Instructions:

Scale and gut the sea bream, then rinse it well. Make a few shallow cuts on the skin of the fish. Season the fish with the ginger juice, cooking wine and a pinch of salt, and let it marinate for about 10 minutes.

Cut the green onion, green chile pepper and red chile pepper into 5-centimeter-long julienne strips. If desired, separate the egg yolk and egg white, cook each as a thin omelet and slice into thin strips for garnish.

In a steamer, add water and a piece of ginger. Lay the green onion strips on the steaming rack, place the fish and chile peppers on top, and steam for 15 to 20 minutes.

Meanwhile, heat a pan and combine the sauce ingredients, simmering for 3 to 5 minutes.

Transfer the steamed sea bream to a plate, garnish with the egg strips and shredded red chile. Drizzle the sauce over the fish or serve it on the side as a dipping sauce.
