Ingredients:

  • 1 kilogram pork ribs (for braising)
  • 1/3 radish
  • 1 onion
  • 4 shiitake mushrooms
  • 1/2 carrot
  • 2 dried red chili peppers
  • 1/2 stalk green onion (white part)
  • 1 stalk chives
  • A pinch of sesame seeds
  • 2 1/2 cups water

Ingredients for Boiling the Meat:

  • 6 cups water
  • 1/2 stalk green onion (green part)
  • 5 cloves garlic
  • 3 bay leaves
  • 10 whole black peppercorns

Sauce Ingredients:

  • 9 tablespoons soy sauce
  • 4 tablespoons cooking wine
  • 3 tablespoons sugar
  • 3 tablespoons corn syrup
  • 2 tablespoons chopped green onion
  • 1 tablespoon minced garlic
  • 1 tablespoon sesame oil
  • 1/2 teaspoon ginger powder
  • A pinch of black pepper

Instructions:

Soak the pork ribs in cold water for about 1 hour to remove excess blood.

In a pot, add the ingredients for boiling the meat and bring to a boil. Add the pork ribs and boil for 10 minutes. Rinse the ribs under cold water to remove any impurities.

Cut the radish, carrot and onion into large chunks. Halve the shiitake mushrooms. Slice the green onion (white part) and dried red chili peppers diagonally. Finely chop the chives. In a bowl, mix all the sauce ingredients until well combined.

In a pot, add the pork ribs, sauce and water. Bring to a boil over high heat for about 20 minutes. Add the radish, carrot and dried chili peppers, cover with a lid, and simmer over medium-low heat for 20 minutes. Stir occasionally to ensure even cooking.

When the radish and carrot are tender, add the onion, shiitake mushrooms and green onion. Simmer for another 5 minutes until the sauce is reduced to a rich consistency.

Garnish with sesame seeds and chopped chives before serving.
