Opened in 1911, Ota Tofu is the longest-running tofu factory in the United States. The Portland, Oregon, store survived World War II and the internment of its founders. Today, owner Jason Ogata still makes tofu the traditional Japanese way — by hand, with just three ingredients. But as soybean prices skyrocket and orders shoot up, Jason is juggling tradition with demand.
