Daehajjim (Steamed prawns)

Daehajjim is a dish of large prawns steamed with seasoning. It has a light and clean taste. Daeha are large prawns that can be up to 25 cm long. Prawns are considered to be a healthy food that strengthens the kidney and provides vitality. Prawns contain a fair amount of good quality protein, calcium, phosphorus, iodine and iron.

Ingredients

4 large shrimps, 5 cups water, 1 tbsp refined rice wine, 1/4 tsp salt, 1/8 tsp ground black pepper, 20 g green onion, 20 g garlic, 1/2 green pepper, 1/2 red pepper, 1 stone mushroom, 1 egg, 1 tbsp sesame oil, 8 skewers

1. Peel prawns, leaving the head and tail intact. Score the backs with a knife, and remove the veins. Spread the flesh flat out and put cut slits into them. Season with the black pepper, salt and rice wine and skewer the flesh.

2. Clean small green onion and garlic. Cut the green onion into 5 cm pieces, and slice the garlic.

3. Wash the peppers and shred them.

4. Soak the stone mushroom in water for 1 hour, remove the stem and wash. Wipe dry and slice finely.

5. Panfry egg to make a yellow-and-white garnish and shred into fine strips.

6. Pour water in the steaming pot and heat it up on high heat for 5 min. When it gives off steam, layer the peppers, green onion and garlic on the bottom and put in the shrimps, then steam for 5 minutes.

7. Take the steamed shrimps out, remove the skewers, and coat with sesame oil.

8. Garnish shrimps with peppers, egg and stone mushrooms.


Tips

● Skewer the shrimps through from tail to the head to stop them from getting twisted.

● Twist the skewer as you remove it.
